Sergio Herman has inherited his love for cookery from his father, with whom he worked side by side at the family mussel restaurant ‘Oud Sluis’ for several years. He took over the restaurant in 1990 where he brought the restaurant to life with fresh high-quality produce from the polders and the waters of Zeeland, laying the foundation of what would become an unparalleled commercial kitchen and would earn him 3 Michelin stars.
In 2013 after 25 years, he shocked the culinary world and closed the doors of Oud Sluis so he could focus on new projects. The Jane restaurant in Antwerp, housed in a beautifully restored chapel, acquired 2 Michelin stars within a year of opening. Pure C Bar & Seafront Restaurant has been awarded 2 Michelin stars, AIRrepublic 1 Michelin star and Air Café and Blueness have followed. Following his passion for french fries and after testing and tasting potatoes for more than a year, Frites Atelier was born. A restaurant serving beautiful delicious fries with sensational toppings.
He has published several cookbooks and has been listed in the The Worlds 50 Best Restaurants for eight years.
